Varanasi's ghats face east, so at sunset the light comes over your shoulder from the west and lands flat on the façades. If you only have one evening in Varanasi and you are choosing between them, the honest answer depends on what you want to bring home.

Sunrise gives you the living ritual city — bathers, chanting, mist, wrestlers, and light that hits the ghats frontally. Sunset gives you comfort, calm, warm even light and a seamless run into the aarti without a second booking. Photographers generally prefer sunrise; families and first-time visitors usually get more out of sunset. Doing both, on different days, is the answer most guests settle on.
